... is through his stomach? Fact or fiction, the reality is we gotta eat, and in the 90s, not all of us can afford eating out all the time ... and not all of us will be fortunate to find a Brian (from Sanctuary) ... With that in mind, Carolyn has submitted a dinner that makes me want to fire up the grill ... and I don't even have a grill! LOL

Here's actually a whole dinner menu - I use it for company in the summer - very quick, very easy, and very low-fat. Tastes delicious too!

Sesame-Ginger Chicken, Grilled Vegetable Kabobs w/ Rice, Toasted French Bread Points, and Grilled Peaches w/Raspberry Puree - serves 4 (568 calories per serving).

Prepare Raspberry Puree first and allow to chill as dinner is being prepared. Assemble vegetable kabobs and start cooking the rice. While kabobs grill, prepare and grill chicken and peaches. Place half inch slices of French bread on the grill, allowing one slice per person, and toast until golden.

SESAME GINGER CHICKEN

1 tablespoon sesame seeds, toasted

2 teaspoons grated ginger

2 tablespoons honey

2 tablespoons (reduced-sodium) soy sauce

4 (4-ounce) skinned, boned chicken breast halves

Vegetable cooking spray

Thin green onion strips (optional)

Combine first 4 ingredients in a small bowl; stir well, and set aside. Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4" thickness, using a meat mallet or rolling pin. Coat grill rack with cooking spray; place on grill over medium-hot coals. Place chicken on rack, and cook 4 minutes on each side, basting frequently with soy sauce mixture. Transfer chicken to a serving platter; garnish with green onion, if desired. Yield: 4 servings (about 201 calories per serving).

GRILLED VEGETABLE KABOBS WITH RICE

1/2 cup commercial oil-free Italian dressing

1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes

1 teaspoon dried whole basil

2 medium-size yellow squash, cut into 1" slices

8 small boiling onions

8 cherry tomatoes

8 medium-size fresh mushrooms

Vegetable cooking spray

2 cups hot cooked long-grain rice (cooked without salt or fat)

Combine dressing, parsley, and basil in a small bowl; cover and chill. Alternate squash, onions, tomatoes, and mushrooms on 8 skewers. Coat grill rack with cooking spray; place on grill over medium coals. Place kabobs on rack, and cook 15 minutes or until vegetables are tender, turning and basting frequently with dressing mixture. To serve, place 1/2 cup of rice on each plate, and top with 2 vegetable kabobs. Yield: 4 servings (about 161 calories per serving)

GRILLED PEACHES WITH RASPBERRY PUREE

1/2 (10-ounce) package frozen raspberries in light syrup, slightly thawed

1 1/2 teaspoons lemon juice

2 medium peaches, peeled, halved, and pitted

1 1/2 tablespoons brown sugar

1/4 teaspoon ground cinnamon

1 1/2 teaspoons rum flavoring

1 1/2 teaspoons margarine

Combine raspberries and lemon juice in container of an electric blender or food processor; top with cover, and process until smooth. Strain raspberry puree; discard seeds. Cover and chill. Cut 1 (18 x 18 inch) sheet of heavy duty aluminum foil. Place peach halves, cut side up, on foil. Combine brown sugar and cinnamon; spoon evenly into center of each peach half. Sprinkle with rum flavoring, and dot with margarine. Fold foil over peaches, and loosely seal. Place grill rack over medium coals; place peach bundle on rack, and cook 15 minutes or until peaches are thoroughly heated. To serve, spoon 2 tablespoons raspberry puree over each grilled peach half. Yield: 4 servings (about 90 calories per serving).

This makes a great dinner as the recipe states or make your own substitutions. I've done both with equal success. Do be warned not to spray the grill rack with the vegetable spray unless it is NOT in the grill. (My husband wasn't paying attention one night and nearly blew up himself and the gas grill!!) I think it also works best to use those tiny pearl onions on the vegetable kabobs. Regular, larger onions (even Vidalias) are too strong (IMHO). Green pepper chunks are a nice addition of color as well..... hope you enjoy!
